if you’re anything like me, you’re always looking for ways to make eating healthy feel exciting, and not like a chore. trying new recipes each week has become something i really look forward to. enter: the ultimate mediterranean salad. it's crisp, tangy, incredibly gut-friendly thanks to a secret ingredient, and takes literally five minutes to throw together.


the best part? you can switch up the protein depending on your vibe or what you have in the fridge. here is the base template for both versions:

  • the base: 2-3 handfuls of crisp mixed greens
  • the crunch & tang: 1/4 cup of sauerkraut (fermented cabbage) (trust me on this, it's a game-changer for digestion and adds the best bite) and 5-7 mini tomatoes (surprisingly yummy!)
  • the creaminess: 2 tbsp of crumbled feta cheese and 1 tbsp of tzatziki sauce right in the middle
  • the dressing: a generous drizzle of 2 tbsp of balsamic vinegar


now, pick your protein:

  • version one (the chicken protein bowl): top your greens, sauerkraut, feta, and tzatziki with sliced, seasoned pan-seared chicken breast. it feels hearty, filling, and keeps you full for hours. to make this even healthier and tastier, sometimes i marinate my chicken in advance and poach the chicken in a homemade broth for a tender, oil-free protein option. 
  • version two (the boiled egg classic): swap the chicken for 2 perfectly boiled eggs sliced in half, letting that rich yolk mix into the balsamic and tzatziki dressing.
